Probably the most famous of all Spanish dishes, paella is an incredibly flavorful rice dish with a history spanning centuries and influences from around the globe. There are as many as 200 distinct versions of paella, but for this class we will stick with what is typically thought to be the most traditional, Paella Valenciana. We will also be enjoying a variety of pintxos, or small snacks, and learning to make a Basque Cheese Cake. Astute readers will note that Paella Valenciana hails from the south-east coast of Spain on the Mediterranean Sea, while the pintxos and cheese cake come from the Basque Country in the north. So yes, we will be doing a little mixing of Spanish regional cuisines in this class, but they compliment each other very well. We will be pairing the dishes with Domaine Artefact wines and, as luck would have it, several of the Rhone varietals we produce are also common in Spain.
