Bonne Nuit “Good Night” is our fortified red dessert wine offering alluring floral and fruit aromas including violets, blackcurrants/cassis, ripe blackberries, dark cherries, and an earthiness complimented by notes of bittersweet cocoa, fig, dried prune, cedar, and spice on the palate.  This wine is an excellent balance of sweetness to alcohol and showcases the best of both worlds, combining the elegance of Cabernet Sauvignon, with the earthiness of Syrah offering depth and complexity in a port-style wine.  Enjoy after dinner with a selection of cheeses, dried fruits and nuts or chilled as an aperitif.

Aromatics: Extremely aromatic with intense floral and fruit, including violets, blackcurrants/cassis, blackberries, dark cherries, and dried fig and prunes with notes of cocoa, cedar, and exotic spices.

Palate: Full bodied with low acidity and medium tannins.  On the palate, affirmation of the wine’s aromatics of violets, blackberries, blackcurrants, dried plums with an earthiness complimented by notes of bittersweet cocoa, figs and dates. Subtle hints of clove and nutmeg shine through, adding depth and complexity.

Finish: Long and complex, predominated by cassis, blackberries, dried fruit and exotic spices

Food Pairings With its rich, sweet, and complex flavors, Bonne Nuit pairs wonderfully with a variety of foods including hearty, spiced dishes like Indian or Moroccan cuisine, venison, duck, and other game meats, foie gras, Pâté or Terrine. For dessert, pair with roasted almonds, walnuts, pecans, dried fruit, crème brûlée or ricotta cheesecake with a raspberry coulis sauce.

Cheese Pairings: Aged cheddar, Gouda, and Manchego have complex, nutty flavors that complement the depth and richness of the Bonne Nuit. The salty, tangy flavors of blue cheese, such as Roquefort, Stilton, gorgonzola, Fourme d’Ambert complement the sweetness and richness of the wine.
