A “classic” Petite Sirah with pronounced aromatics of cassis and dark plum and savory elements, including licorice, balsamic, vanilla, caramel, espresso, and dried herbs/tarragon, damp earth, tar, and leather. On the palate, it is dry, full-bodied, with medium+ tannins and medium+ acidity. The finish is long, with lingering dried fruit, vanilla, licorice, and leather notes and mouthwatering acidity.

Food Pairings: With its smoky fruit flavors, Petite Sirah will pair nicely with bold exotic spices and herbs–Pollo con mole is a classic pairing, roasted pork, barbecue beef, bison/beef burgers, game, sausages, grilled steak, Mexican food, braised lamb
Cheese Pairings: The best cheese to pair with Petite Sirah is either a strong cheddar or goat gouda. Other great options are bold cheeses like blue cheese and camembert or look for options that are sharp, aged, or smoked.
