The 2017 Cat Canyon Syrah has notes of smoked meats, black and thimble berries give rise to anise, coffee, olive and herbs de Provence. This is a medium to full bodied Syrah which presents a more masculine side to Syrah as opposed to our estate blend. As the wine unfolds in the glass, aromatics evolve to highlight Asian five spice, white pepper and clove. The tannins in this wine are gripping and additional aging in bottle will improve integration.
Cat Canyon Syrah comes from a sandy, 50+ year old dry farmed vineyard planted on original rootstock. The grapes from this vineyard produce intense, age-worthy wines. 50% of the fruit sourced was from the vineyard floor and 50% was from the hillside. This wine was our first carbonic maceration fermentation or 100% whole cluster fermentation. After primary fermentation the wine was racked to 50% one-year French oak and 50% one-year Hungarian oak barrels and aged for 19 months.
Serving with darker meats and exotic spices brings out the fruit notes of Syrah, like five spice pork, lamb shawarma, and tandoori. Enjoy it with braised short ribs with mushrooms, bacon burger, braised pork belly with mushroom risotto, or rosemary lambchops.
