2016 Cat Canyon Syrah
An entire farmer’s market in the glass! Aromatics are organic, earthy in nature with savory mushroom, truffles (smells like a wine cellar) with notes of sweet marjoram, sage, green peppercorn and smoky ham. Palate of dark blue fruits from carbonic maceration with bacon/game notes, black berries and baking spices. Time in the glass finds caramel, blackberries, coffee, white pepper, cumin, and tobacco. Oak is well integrated and “just a suggestion”. Very complex and age-worthy wine that will pair well with cote de boeuf, game, lamb and hard aged cheeses.
Cat Canyon Syrah comes from a sandy, 50+ year old dry farmed vineyard planted on original rootstock. The grapes from this vineyard produce intense, age-worthy wines. 50% of the fruit sourced was from the vineyard floor and 50% was from the hillside. This wine was our first carbonic maceration fermentation/100% whole cluster fermentation. The carbonic fermentation process begins when the weight of the grapes crushes the grapes below starting fermentation from the inside out. In carbonic maceration, the grape stems lift aromatics, help with the flow of fermentation, decreases alcohol and generally produce a fruitier wine. After primary fermentation the wine was racked to 50% one-year French oak and 50% one-year Hungarian oak barrels and aged for 19 months.
