2016 La Dame Blanche
Our Grenache Blanc fruit was sourced from Camp Four vineyards in Santa Ynez Valley and harvested on 30 September. The fruit was picked with a pH of 3.3 and a Brix of 24.0, resulting in a vintage with excellent concentration and good acidity. The grapes were whole cluster pressed, cold settled and initially fermented in stainless steel. 50% of the lot was transferred to a new LT French oak hogshead for 3 months, the balance was transferred to stainless steel barrels. Battonage was practiced for 6 weeks and then the combined wine was aged on undisturbed lees for 7 months in stainless steel barrels.
